Vegetarian beanloaf

This is a great recipe for bean loaf the meat free alternative.

Feeds 4 people (as long as you have 1 or 2 side dishes)

You will need:

50-100 ml of extra virgin olive oil
3 cups of organic cooked beans
1 small organic onion
4 cloves of organic garlic
5 medium button or shitake mushrooms
1 organic carrot
fresh rosemary, parsley, cilantro or other herbs you enjoy cooking with
a dash of cayenne pepper (unless you do not like it hot)
1/2-1 teaspoon of salt
2 avocado’s ready to eat

Chop the onions, garlic, and carrot into small pieces, and slice the mushrooms. Chop the herbs.
It is important to cook at a low heat because the olive oil will burn if the temperature is too high.

Preheat your oven to 185 C or 375 F

Begin to saute the onions, mushrooms, garlic and carrots. After approximately 5 minutes add the herbs, the salt, and the cayenne.

Using a fork crush the beans so that half of them are a paste but the other half still look like beans. If you would like to add 1 egg, it will help to keep the texture after cooked.

Next mix the beans with the saute mixture, and cook for 40-45 minutes until a fork or toothpick inserted comes out clean.

Allow to cool for 10-15 minutes, then top with sliced avocado.
